Blueberries are popular in the U.S. They rank second only to strawberries in annual berry consumption.
Nutritional Benefits of Blueberries
Among all fruits, vegetables, spices and seasonings common to the American diet, blueberries rank among the highest in antioxidants, which optimize healthy bodies by combatting the free radicals that can damage cellular structures as well as DNA.
Research on blueberries suggests benefits for the nervous system and brain health as well as improved memory.
Eating raw blueberries, rather than eating them incorporated into baked desserts, provides the greatest nutritional benefits.
Storing and Using Blueberries
Blueberries are not as fragile as other summer berries, but still require care. Do not wash fresh blueberries if they are going into the freezer. Instead, place dry blueberries in freezer bags; when frozen, they will pour out like marbles and won’t stick together.
When using frozen blueberries in cakes or muffins, there is no need to thaw them first; simply rinse off any ice crystals and gently pat dry to prevent juices from “bleeding” into the batter.
Fresh blueberries can last 7-10 days in the refrigerator and up to 2 years properly frozen.
