Buffalo Burgers

| Ingredients:
• 1 pound ground buffalo
meat
• Salt
and black
pepper to taste
• 4 hamburger
buns, split in half

Preheat barbecue grill. Divide ground buffalo meat into four patties,
at
least ½ inch thick. Place patties on hot grill (grill
buffalo over
a low charcoal heat, not in the flames). Cover barbecue with lid, open
any vents, and cook 6 to 8 minutes; turn patties over and cook another
6 to 8 minutes. Season patties with salt and pepper. Lightly grill the
inside of the buns. Remove patties and buns from grill; place patties
on
buns and serve with your favorite condiments.
Note: The
leanest grades of ground buffalo may require a little more moisture.
Place
a small amount of butter on the top of each patty while cooking.
Makes 4 servings.

Bison
Today,
the
only place you will see buffalo roaming freely are on large ranches on
the Plains and in the Rocky Mountain regions. The buffalo is no longer
and endangered species, and buffalo ranchers are raising them by the
thousands.
Buffalo burgers taste great, and many people feel that buffalo is the
most
flavorful meat they have ever eaten. It has a sweeter and richer flavor
than beef and is not gamey. Many consider this the meat of the new
millenium. |
