Preparing Dried Seaweed

from Le Cordon Bleu Kitchen Essentials

Nori

To enhance its sweet delicate flavor, nori should be toasted before being used. Check the packets, as some nori available in the shops is ready-toasted. Toast sheets over a flame for a few seconds, or place on a cookie sheet and put in a hot oven for 30-60 seconds.

Wakame

Wakame comes in dried shreds and needs to be reconstituted before use. Soak the shreds in warm water for 2-3 minutes; drain thoroughly and use in soups, salads and stir-fries.
