Shish Kebab

adapted from Good Food from the Near East
    *  6 12-18" metal skewers

    *  oil or other fat

    * 36 small squares of lamb
     * Bay  leaves
     * Tomato quarters
     * Small onions
     * Green pepper


Rub the skewers with the fat. Stick  them through the lamb chunks, separating the pieces of meat with a bay leaf, tomato quarter, slice of green peppers, or an onion.

Place the skewers over low flames or coals, or under the broiler heat.




Turn every few minutes until the meat is well browned on all sides. Serve on hot rice, or wheat pilav.

Yield: 6 servings.
