| Prepare
olive
oil at least one day in advance by adding the pepper flakes
and the
garlic
and let sit.
Chop pancetta and fry--drain
95% of the oil from the pancetta .
Boil pasta in salted water until
al dente--drain. Add to skillet with pancetta and flavored olive
oil.
Cook on medium for five minutes, while frying the eggs in butter in a
separate
skillet.
Place a serving of pasta on
each plate and sprinkle with Parmesan cheese. Top each serving with two
fried eggs.
