Cooked Diced Potato
• 2 Cups Diced
Ham
• 2 Tablespoons
Chopped Green Onion
• Cheese Sauce
• ½ Teaspoon
Black Pepper
Topping
• 2 Tablespoons
Bread Crumbs
• 1 Tablespoon
Melted Butter
• Seasoned Salt

Procedure
Prepare
the sauce first by melting the butter in an appropriate-sized saucepan
and stirring in the flour, until a mixed well. Gradually
whisk in
the milk and bring to a boil for a couple minutes. Stir in
paprika,
cayenne pepper, mustard, and salt. Add cheeses and remove pan
from
heat. Fold cheeses in while sauce cools until smooth.
Combine
the casserole ingredients in a bowl and transfer to a buttered
casserole
of suitable size. Mix melted butter with bread crumbs and
seasoned
salt to taste, and toss over the top of the casserole pressing them in
slightly. Cover and bake at 375°F for 30
minutes. Remove
lid from casserole and turn on broiler. Broil until the bread
crumbs
look toasty, monitoring very closely, as they will burn quickly.
