Barbecue Ribs and Barbecue Sauce
"The official song of Kentucky is 'My Old Kentucky Home,' which Stephen Collins Foster composed after a visit to Federal Hill in Barsdtown. My Old Kentucky Homes Cookbook features a recipe similar to the following for barbecue sauce and ribs." ~ Albert W. A. Schmid
2 full racks of ribs

liquid smoke

1½ cups tomato catsup

½ cup vinegar

1 large onion, chopped

2 tablespoons brown sugar

dash Tabasco sauce

1 teaspoon mustard

½ teaspoon salt

¼ teaspoon black pepper

Barbecue Ribs and Barbecue Sauce

Cut ribs into serving pieces, place on a rack in a
broiler pan, and salt and pepper. Place under the broiler and brown on both sides, taking away a lot of the grease.

Mix all sauce ingredients in a pot and cook for about 7 minutes. When the ribs are nice and brown sprinkle them with liquid smoke, place them in a crockpot, and pour the barbecue sauce over them.

Set the dial at low and cook for 12 hours.
