Tomatillos

Despite their name, tomatillos are not small tomatoes.
Grown on a rambling vine, this small tart fruit ripens
yellow to purple, but is generally harvested and used
green.





Sometimes called Chinese lanterns, the fruit grows  inside a husk that turns light brown and paperlike as
the plant matures. Each tomatillo measures about 2 inches across.

Used primarily in Mexican salsas, tomatillas are best  when firm and smooth with no soft spots. They can be  refrigerated up to one month.

Chopped or puréed raw, tomatillos have a tart flavor  that mixes well with all kinds of herbs and spices. It has a high pectin content and will naturally thicken  sauces to which they are added.
