Caprese Dip

This dip is a variation of the famous salad. You can substitute ripe tomatoes for the sun-dried tomatoes. Serve this with bakery quality sourdough bread or traditional Italian or Baguette bread. Use it as an appetizer for pasta in marinara (red) sauce.

To soften sun-dried tomatoes: Put tomatoes in a small bowl, pour boiling water over tomatoes to cover, and let sit 5 minutes. Drain.

Chop softened tomatoes into large chunks. In a mixing bowl, combine tomatoes, mozzarella, basil leaves, salt and pepper.

To serve, mound tomato and cheese mixture in dipping bowl. Serves 4.

Tomato and cheese mixture can be made up to a day ahead of time and stored in the refrigerator in an air tight container. Discard after 5 days.

  • 5 pieces of sun-dried tomatoes, softened 

  • 1/4 lb. fresh mozzarella cheese, diced

  • 8 fresh basil leaves, roughly chopped

  • 1/2-3/4 cup dipping oil

  • Salt and pepper
